Txuleton – Basque T-bone steak frites
Our Club take on this glorious Basque dish. We use a thin cut dry piece of 28 day aged local T-bone steak, season and sear it. Then serve with Espelette pepper coated chips, a crisp green salad and slow roasted peppers

Merluza en salsa verde – Hake fillets with clams
Cooked in a warm salsa verde sauce with white wine and served with mini roasted potatoes with wilted spinach

Roasted peppers stuffed with vegetable rice and rosé port soaked prunes. Served with a fig and Ossau Iraty salad
