For our 5th Arosteria* we’re using Paul Bowyer’s black pudding, local free-range pork and yes, we’re crossing the county boundary to get some forced rhubarb from the Yorkshire Triangle.
This is a three-course meal and the 5th in our Arosteria series – where restaurant and butcher work together with the finest local and seasonal produce to create something a little different.
*Southern Italian concept where butcher and restaurant have a love-in to bring the best, seasonal, local cuts of meat.
