We love a spiced red cabbage but the volume of ingredients to be stirred in one of our big pans calls for a spoon of some considerable strength and size, whilst still being shapely enough to make it easy to use. JoJo’s come up with our perfect spoon and even a small notch so it hangs over the side whilst cooking.
Spiced red cabbage at Hathersage Social Club – Recipe Guide
Butter or good olive oil in a large heavy based pan. Add finely sliced onion and garlic and gently caramelise. Add a sprinkle of ground cinnamon and a generous sprinkle of salt flakes. Once nicely combined start to add the sliced red cabbage and chopped red apples. This is where the use of a good wooden spoon is key for a good stir! Cover and allow to warm. Once the cabbage is starting to take on a glossy sheen add equal measures (we use 4 tablespoons of each) of spiced rum, balsamic vinegar and muscovado sugar. Cover and continue to gently simmer. Once the cabbage is cooked but still has a bit of bite, remove the lid and reduce any liquid left in the bottom of the pan.
