Oaxaca (wah-hah-kah)

The state of Oaxaca (wah-hah-kah) in Mexico should be on every gastronomic tourists hit list.  An amazing place wether you’re Mexican or a visitor.  Come for the outstandingly colourful markets and cuisine, unbelievable festivals and unbeatable indigenous culture and crafts.

Oaxaca is a safe place to travel but undercurrents of political protest have given it a seductively edgy vibe that you can see in the satirical street art, bohemian bars and traditional culture at the street markets.

Oaxaca is far from a tourist secret but it’s managed to hang onto authentic culinary experiences.

The Mercado 20 de Noviembre is one of the best places in Oaxaca city to sample local specialties and street food. It’s a huge place with tightly packed fondas (food stalls) that sell grills of sizzling and smoked meats, vegetables that the vendor will grill for you.  You pick from all of the stalls to end up with your plate of good and then sit in shared booths (with the locals) to eat.   Vendors will visit you to sell tortillas to add to you plates or relishes and pickles to add like pots of spicy mole negro (a sauce of chillies, spices, and chocolate),
